@onuSBonus instead of trimming my own brisket this weekend i decided to throw a local butcher a bone and asked for a trimmed brisket and make me ground beef with the trim and I'll pay for any extra lean meat they add and i WAS going to make meatloaf but it looked so good i made a burger and like fuck I guess I'll be eating burgers while i smoke this brisket

One of my favorite burgers was from Joe Grinds His Own Fresh Chuck Daily in SF, outer Mission, I think. Pretty sure it's not there anymore. That's some smart burger technique you've got going there.

:blobreachdrool: Just realizing I don't even remember the last time I ate a burger. Not anti meat just haven't been eating much lately. On occasion, something like this is as special as a steak. You're more of a meat expert than me. I was a cook in diners growing up. Guys like you have raised the bar exponentially though.
