Big fan of the chesse sauce power of sodium citrate.
Is that really the chemical formula? Awesome.
@pseudonym
It really is (not a chemist though)
@Natasha_Jay a cheese-related anecdote... I think I accidentally discovered how to make Mozzarella cheese a short while back while following an igNobel-prize winning recipe for "cheese and pepper" (I don't know the proper Italian name for it).
Is it? 🤣
Why is it so often I get hungry as soon as I read your beautiful and smart posts? 🙄
@Natasha_Jay
This is enough to convince this atheist that there might be a god (or more) an that they are chemists 🙌🧀
@Natasha_Jay i learned this from Jeopardy!
Cleans your radiator too.
@Natasha_Jay 🎖️
@Natasha_Jay lol, i had to check that was real, so amusing it is true 😂
@jenf
I had to check it too, after posting and then updated with a link.
@Natasha_Jay This is the information I had sought for at least ten years, and finally found on my own only about six months ago. Sadly, this *could* have helped me... 😉
On a more practical level, I even more recently found it. That is, I'd been looking for it as a kitchen ingredient for a while with no luck, but just came across a recipe video which includes *making it*. Lime juice in a pot, about 2Tbsp, then a pinch of baking soda. Warm and stir, and the bubbling is the chemical reaction which turns that into sodium citrate! Then just add some cream and your cheese a bit at a time, still stirring as it melts. Done. 😀
@Natasha_Jay
Safer to eat than trisodium polyphosphate!
@dancingtreefrog @Natasha_Jay Stay away from Cheerios, then 😉
@MichaelPorter @Natasha_Jay Haven't had any for years. My only uses of TSP were for cleaning things like greasy engines!
@dancingtreefrog @Natasha_Jay It's used in very small amounts to adjust pH during their manufacture (no idea what is pH sensitive in Cheerios). Your body uses all those ions anyway, so it's no big whoop. That didn't stop a bunch of people from claiming that the caustic chemicals in Cheerios would harm your child. 🙄
Sheesh, Cheerios are the perfect baby food - get mushy pretty quickly, can’t choke you, good for practicing manipulative skills, moderately nutritious…
@MichaelPorter
Agreed about them as baby food - perfect finger food for babies!
US Navy used to use concentrated TSP solution to strip paint from ships. Strong stuff!

@Natasha_Jay
I had to double check to see if that was actually real, or if you just made it up to make that joke.
@Phracker2Art
Don't worry, I had to check it was real too 😅
