Coffee theory: once coffee is roasted, there are only 3 types of beans: perfect beans, imperfect beans, and bad beans

Bad beans are just bad. No matter how you brew bad beans, they will always make bad coffee

Perfect beans work in all brewers, with the right recipe. Pour over, espresso, automatic, immersion, etc: a skilled person can make great coffee, given enough tests

Imperfect beans are the most fun, because they will make an excellent cup of coffee with one or more brew methods, but not every brew method

The majority of coffee beans I buy tend to be imperfect beans. I have gotten to where I can typically make a decent cup by the third try, and an excellent cup before I run out

Why I enjoy imperfect beans: they tend to have interesting flavors that do not work with some brewing methods, but are a unique experience when made with a compatible method

I currently have some decaf beans that I purchased that smell awful in the bag. When ground they smell even worse, like a combination of rotting fish and rotting chicken, but damn if they don’t make some of the absolute best cold brew.

No way am I heating them up though.

Oh it’s definitely just these beans. I have decaf beans I use for pour over and other decaf beans I use for espresso and they both smell lovely.
