Well it took waaaaaay longer than it should but I got the display working on this dev board. It's 800 x 480, part of the "spi-term" medium program. At some point I'm wondering if I can use the LTDC peripheral to drive an 800 x 600 VGA monitor. It's also using 768K of the 3M of on-chip SRAM for the frame buffer. An alternative implementation would be to build the framebuffer in an FPGA with an OctoSPI interface. (or Hexadeca spi).
