Raw collard wraps are my current obsession. Now devoting a good 90 minutes on Sundays to making a bunch for the week.

A square plastic container with two collard wraps inside—one half eaten to show its colorful insides (a spicy nut butter-ginger slaw, carrots, mango, pineapple, yellow pepper, cilantro, basil, mint, and mixed microgreens).

@lorihc oh boy, I love lettuce wraps, but have never been a fan of collards. Not sure I could handle this… even though color wise it looks amazing!

@michaelrowe01 They're surprisingly delicious! The somewhat-sweet innards work well with the slightly bitter collard outer.

@designatednerd I imagine so! I like them raw tho, so not fussed. :-) It's the prep of everything that's messy—lots of mandolin slicing, shredding, chopping, marinating, blending, etc. About 15 years ago I was following a raw diet and went through prep like this on a daily basis, believe it or not. I've never felt so great in my life, but it *was* a lot of work!

@lorihc Yeah I think the blanching leaves most of the raw taste but just makes it bendier. We’ve done that for wraps before and it made things a lot easier.

@mflider Do you mean, do I rinse my collards? Yes; I'm more thorough if I spot bugs or dirt. @designatednerd 's suggestion of blanching would probably sort out the dirt and bugs too. :-) The other vegetables & fruits I scrub and/or peel.
