Get a linen shirt soaking wet before you start your ride, then put it on and enjoy the evaporative cooling.

If it's a longer ride in a humid climate, carry along a tube sock. Fill it with ice, and drape it around your neck for some good cooling.

And, pace yourself. No sense in overheating.
