    Herbs. Lots of them. I used fistfuls of parsley, mint and basil, but use whatever you have / like.

    You will need much more than you think.

    Put the herbs in a bowl and add some garlic, anchovy and Dijon mustard. Chuck in some capers if you want.

    Basil, mint and parsley in a steel mixing bowl with mustard, anchovies and garlic.

    Zuzz it all up with a handheld blender. Or use a food processor. Or just chop everything really finely by hand.

    You'll end up with a vivid green sludge which is absolutely delicious.

    Very vivid green sauce made as described earlier.

    Add some olive oil and lemon juice to loosen things up, and you're done. No seasoning required.

    You can omit the anchovies if you want to keep it #vegan but perhaps substitute some olives or soy sauce.

    I had this with some roast cod, sautéed potatoes and broad beans.

    But, as Slater said, it goes with anything.

    @iamdavidobrien maybe next time you'll skip using the # before the word vegan - as long as your plate is not animal exploitation free.

    You seem to know how to veganize it, so why do you need to use anchovis?

    And don't you think vegans do know how to veganize omnivor recipes?

    That's how I 'found' you.

    All those vegans try all their best to avoid animal exploitation.

    You don't.

    We do not want to read recipes with animal exploitation. You forced one on us. That's rude.
