There are a number of Amaranth greens available in South India – Mulaikkeerai, Muli Thandu or Thandukkeerai, and Arikkeerai. The most common variety of amaranth that is grown here, Foxtail Amaranth, is Thandukkeerai, but it is grown here for ornamental reasons in gardens, not culinary ones. It is very difficult to find the different varieties in shops unless you search the Asian markets.

The different varieties do have different tastes and properties – for example, some are heating to the body and some are cooling to the body. In India, the crops of Amaranth are also dependent on the season – the cooling ones in the hottest parts of the year, the heating ones in the coldest times of the year. Here, there is no such availability, information or attention to detail. So use whichever amaranths (or other greens) are available to you.

We generally think of Masiyal as being made with toor dal or a mixture of toor dal and mung dal. However Meenakshi Ammal in her books Cook and See has several recipes for Amaranth Masiyal (in Vol. 1) that do not contain any dal. This one mashes the leaves, and I have to say it is very delicious. One of the defining characteristics of Masiyal is that there are no ground or powdered spices, only seasoning with a few selected whole spices. It allows the ingredients to shine rather than being overwhelmed with spices, onions or garlic. That is the beauty of all traditional Tamil food.

About 2 years ago, I created Static.Quest as a #webring for static websites and a place to show off your static content. Sites could be built with any static site generator or by hand, and allowed you to join a unique circle of other static sites.

This weekend, I updated some core functions of the web ring process to eliminate the need for JavaScript on the client browser side, and brought this into the #11ty build process.

jesus fuck

torvalds isn’t making a small amount of money off of the AI companies funding the Linux Foundation. he’s making fucking *bank* forcing LLMs into the kernel development workflow and turning his project into slop.

it’s always interesting finding out exactly what number it takes to make these small men compromise on what they pretended were their core values, and for Linus that’s $1.5 million a year. $1.5 million to ruin the good work he was known for.

what number do you think it took the other maintainers to compromise on their proclaimed values and sell out their life’s work? I can guarantee you it was a lower number. Linus is a particularly high value target, and the devil’s deal from the AI corporations is that you’re supposedly accepting money in exchange for ushering in the future.

when a small man in power’s paycheck is contingent on believing he’s saving the world, you won’t convince him otherwise. https://tiny.tilde.website/@lykso/117083416791403736

'According to documents filed under the US's Foreign Agents Registration Act (Fara), Israel paid influencers up to $7,000 per social media post, operating through its contractor Bridges Partners, which worked with a global ad agency called Havas Media Group Germany for an “Influencer Campaign”.

Havas also signed a $15m contract with Trump's former campaign manager Brad Parscale’s firm Clock Tower X, which was recently exposed to be behind a social media campaign to attack the US president’s ceasefire deal with Iran on behalf of Israel.'

@EUCommission The whole action plan read like it was written by people who think that the Mechanical Turk is a thinking machine.

"The age of AI" was repeated over and over, but the technology is so inefficient and generally bad at what it's marketed for that major players have to put "Don't use this for anything lol" clause to their ToS.

We are experiencing a record heatwave in Europe and you write about scaling "Gigafactories"

This is so incredibly disappointing.

German state of Mecklenburg-Vorpommern heads down the open source sovereignty road

“So far, around 5,000 staff are using their new FOSS tools for chat, video conferencing, and groupware, but the plan is to roll it out to more than 50,000 public employees. It is also using OpenProject. For now, the plan is to keep Microsoft clien...

It hasn't been entirely successful. Elite impunity is only popular with elites and people who think they're in close proximity to them. But it has had a deadening effect on our politics and our culture in general and unfortunately, too many people depend on our elites to show them the way.

If you are an anarchist, socialist, or even a moderate Democrat and you still have an account on X/Twitter—or have money invested in any of Elon Musk's companies—you are providing legitimacy and resources to a Sieg-Heiling white supremacist who is openly signaling that he intends to kill you.

The language about killing "race traitors" specifically by hanging them comes directly from explicitly neo-Nazi sources including The Turner Diaries and Ben Klassen, who first popularized the term "Racial Holy War."

If this is what Elon Musk says in public, we can imagine what he is saying—and doing—and planning—in secret.

We are already at war. Act accordingly.

Why does Amazon, a company valued at two and a half trillion dollars, need to borrow 17.5b from banks for Ai? I saw a quote yesterday - "The entire US economy right now is just 7 companies sending a trillion fake dollars back and forth to each other."

Fresh off bond sale, Amazon borrows $17.5B from banks as Ai spending continues

A sober take from @ShachiKurl of Angus Reid Institute of how Canadians are not on side with Mark Carney’s enthusiastic approach to AI or data centres.

They aren’t uninformed or illiterate; they simply experience the sides of AI the government prefers not to focus on.

Bots just officially outnumbered humans on the internet for the first time ever. Cloudflare’s latest report shows AI and agentic traffic has grown so fast its now the majority of online traffic. We crossed a line and most people didn’t even notice 😳 https://radar.cloudflare.com/traffic#bot-vs-human

1) The co-founders picked #ATproto but only started using the network WEEKS after their Davos launch

2) The CEO said "we also want to keep European data in Europe to maybe train European AI models with our data because we also have amazing AI companies in Europe" 🤯

3) W Social user "homersimpson"
