"Europe would not be able to sustain war of attrition with Russia", defence officials say.

Well, russia also seems to be unable to sustain a rapid war either ("Kyiv in three days", was it?). What we need is defence officials ready to do their jobs, to work in a way that provides security and defense of the European People against military threats like russia's.
If russia attacks Europe (directly, because they have been attacking Ukraine, which has more than gained their place in the politically-defined "Europe", and have been using hybrid warfare to do almost whatever they want), we need to do what we didn't allow Ukraine to do: swiftly bring the war to russians and their political, ecomical and religious leadership (all criminals under the russian supremacy and empire), with all the might that can be mustered in little to no time.

I'm not advocating for more war. I'm saying that if we do have to defend ourselves, we shouldn't be thinking about what will be left of the enemy so we can trade with them later (which has been done with russia before, see what it has brought upon the world...).
