How to fix an iCloud sign in unknown error occurred problem

Ok, so if you follow me you'll probably know I change my mind and processes a lot and when trying to go back to iOS 18.5 I had an issue signing into my iPhone. When signing into my account I was getting "unknown error occurred" with my AppleID - which worked on my Mac fine.
