Recipe: 'Quick and easy fish stew' 🐟🦐

Such a great simple healthy recipe. Here in Ireland the fresh leeks are amazing, and the smell of them (chopped raw) filled the house last time. Highly recommended -

Ingredients, Serves 2

1 tbsp olive oil
1 tsp fennel seeds
2 carrots, diced
2 celery sticks, diced (I prefer a sweet red pepper)
2 garlic cloves, finely chopped (or more 😋)
2 leeks, thinly sliced
400g can chopped tomatoes (the best you can afford eg. think Mutti, Cirillo)
500ml hot fish stock heated to a simmer
2 skinless pollock / white fish fillets (about 200g), thawed if frozen, and cut into chunks. Cod, hake, sea bass etc
100-200g raw king prawns

My "must-have" additions -
1 tbsp sweet paprika
1 tbsp smoked paprika
Chili flakes, to taste

(Optional: Some cooked mussels, if you want)

A happy 4th of July, and 250th, to our US friends.

It was trans+ pride in Cork today, although I didn't go in the end - today is also the anniversary of my dad dying, and it just didn't feel 'right'.
They got the weather for it, and I hope everything went off well - I'll find out later, but I'm sure it did.
