Seconding Claudia Roden, adding that one can apparently buy split hulled fava beans from bin inn.
Roden is definite they need to have the tough skins removed before grinding, a friend does not bother, I haven't got round to experimenting yet.
One can also substitute other legumes, though a purist might object to the flavour difference. I've used both marrowfat peas and yellow split peas
